Pan Fried Salmon with Baby Gem & Peas

A simple healthy supper that you can make in 20 minutes. It is a recipe I pulled out of Good food and its delicious and quick. You just need 2 frying pans. I usually add some new potatoes if I want to make it a little more substantial but leave off if you are being good. Enjoy!

Ingredients
  

  • 2 tsp olive oil
  • 4 little gem lettuces, halved lengthways
  • 200 ml vegetable stock
  • 4 x 130g salmon fillet
  • 200g  frozen petit pois, defrosted
  • ½ small bunch dill
  • 1-2 tbsp crème fraiche
  • 1-2 tsp Dijon mustard

Instructions
 

  • Heat 1 tsp of the oil in a large lidded skillet or frying pan over a medium heat. Add the lettuce halves, cut side down and fry for 2 minutes until beginning to brown. Pour in the stock and cover and cook for 5 minutes. Then add the peas and dill for a further 2 minutes.
  • Meanwhile, season the salmon with salt and pepper all over. Heat the remaining tsp oil in a second frying pan over a medium heat and fry the salmon skin side down for 3 minutes. Carefully flip and cook for 3 minutes more until just cooked through.
  • Arrange the salmon fillets and lettuce halves on warm plates. Stir the crème fraiche and mustard into the lettuce pan and warm through. Divide the peas and sauce between the plates. Garnish with a little more dill and serve.
