Asteak sandwich is a classic American lunch. Here we make 2 steaks go a long way and make 6 ciabatta rolls. I have made the coleslaw with white cabbage and kale for a change and blue cheese goes particularly well with the steak, although there is only a small amount.
A very summery easy dish of pasta with just 8 ingredients. If you have time to let the flavours develop great, but I have often made this just straight away. By the time the pasta is cooked you can chop the tomatoes and herbs etc and toss together. Enjoy!
A simple and refreshing blueberry and lime semifreddo recipe, perfect for summer gatherings. Easy to prepare ahead and serve chilled for a delightful dessert that serves eight.
Caponata is found everywhere in Italy and eaten warm or cold as part of an antipasto or a side dish. Here it is served with griddled garlic sour dough and mozzarella. Would be great for a BBQ with a big bowl in the middle of the table for everyone to help themselves. Enjoy!
This is a different and healthier version of our favourite fish and chips. The cod is coated with red pesto and breadcrumbs and baked in the oven. I serve it with baked sweet potato and parsnip wedges, but of course you can serve with regular chips. Enjoy!
Simple, tasty kebabs with a mixture of vegetable and meat skewers so can you serve vegetarians if you need to. They are great over the hot coals of a BBQ but also can be done under a grill. You need metal skewers as wooden ones burn but the metal ones are cheap to buy. If you like spicy add a few more chopped chillies when you serve. Enjoy!
A quick and flavourful supper dish using lime marmalade, chilli, and garlic to create a spicy marinade for roasted chicken thighs, served with crispy sweet potato wedges.
You get two cakes in one with this unusual bake. An easy chocolate cake layer on the bottom, topped with a delicious rocky road layer of chocolate studded with walnuts, raisins, marshmallows and Maltesers. Enjoy!
This is an easy family one pot with a few ingredients. Filling and satisfying for a cold winters night and there is a minimal amount of washing up. The meatballs are made from sausages but you could easily make out of minced beef, lamb or pork. You could add mixed herbs or chilli to add more flavour and pieces of chorizo fried with the meatballs. Enjoy!
This is an elegant starter for Christmas day and quite light. You can use a smoked fish of your choice, smoked salmon, flaky hot smoked salmon, smoked mackerel or smoked trout. I’ve given you a recipe making homemade mayonnaise but you can easily use Hellman’s. Enjoy!
